Sant Elia Balsamico Bianco
Sant Elia Balsamico Bianco, or white balsamic, is made by a good friend in Modena, Italy. It was originally made at the request of a Parisian Chef, who wanted a balsamic without the colour and intensity of flavour of the traditional product. It is made from cooked Trebbiano grape ‘must’, but aged in stainless steel barrels to avoid the build up of colour which would occur if wooden barrels were used. Finally wine vinegar made from the same Trebbiano grapes is blended in with the ‘must’ to create the finished Balsamico Bianco.
