The Balsamico di Modena is made from cooked Lambrusco grape must (juice) and aged in wooden barrels . It has no additives such as vinegar or caramel.
The Bianco Balsamico is made from cooked Trebbiano grape must, but aged in stainless steel barrels to avoid the build up of colour which would occur if wooden barrels were used. Finally wine vinegar made from the same Trebbiano grapes is added to the must to create the finished Bianco Balsamico
